Chinese Cuisine: Teochew Steamed Fish Recipe Summary Recipe

- 250g fish
- 6 grind salt
- 2 dashes white pepper
- 190g / 1 big tomato, cut into wedges
- 1 pickled, sour and salted plum
- 150 g silken tofu
- 10g ginger, minced
- 10g garlic, minced
- 70 g preserved mustard, sliced
- 4 tablespoons water
- 1 tablespoon soy sauce
- 1½ tablespoons Shaoxing wine
- 1/2 teaspoon sugar
- 1 spring onion, trimmed (optional)
- Add salt (3 grind each side) and white pepper (1 dash each side) on both sides of the fish.
- Add minced ginger into fish stomach.
- Arrange tomato wedges, sour plum, preserved mustard and tofu around the fish. Add minced ginger and garlic on both side of fish .
- Add sauce mixture and steam the dish for 6 minutes or until the meat is thoroughly cooked.
- Garnish with spring onion.
